Ingredients

  • 6 Garlic Cloves, Finely Chopped
  • 2 tbsp Brown Sugar
  • 2 tbsp Olive Oil
  • 1 tbsp Freshly Ground Black Pepper
  • 1 tbsp Ground Cumin
  • 1 tsp Cayenne Pepper
  • 50g Sea Salt
  • 1.5-2kg Flat-Cut Brisket
  • 2 Onions, Thinly Sliced
  • 440ml Can Lager or Beer of Your Choice

Directions

  1. In a bowl, mix the garlic, brown sugar, mustard, oil, black pepper, cumin, paprika, cayenne and the salt until combined, then rub all over brisket. Wrap in cling film and refrigerate for 1hr, or for best results overnight. Before cooking, allow the brisket to come up to room temperature for approximately 1 hr.
  2. Scatter onions in a large roasting pan and set brisket, fat side up. Add the beer and cover with tin foil. Cook in the oven running S03 programme until meat is very tender.
  3. Remove foil from the brisket from the oven and turn the grill function on at 200°c, grill until top is browned and crisp, 5–10 mins.
  4. Once cooked, remove the brisket from pan and shred with two forks. Then remove the onions with a slotted spoon and add into the beef with a few spoonfulls of the cooking liquid and a pinch of salt, mix thoroughly.
  5. Serve in brioche buns fresh pickles and your favourite condiments
